Title: Marinated Mushroom Salad Categories: Super1 Yield: 6 servings 500 g Mushrooms 1 Capsicum quartered; seeds & -pith Removed ----------------------------------DRESSING---------------------------------- 2/3 c Light olive oil 1/3 c Lemon Juice 1/4 c Shredded basil leaves 1 tb Seeded mustard 1 tb Caster sugar 1 Clove garlic; crushed 1. Wipe mushrooms with a damp paper towel. Slice thinly. Place in a large bowl. 2. Cook capsicum quarters under a hot grill until charred. Place in a plastic bag until cool enough to handle. 3. Rub off skin. Cut into thin slices. Combine with mushrooms. 4. To prepare dressing: Place all ingredients for dressing in a screw top jar. Shake well. Pour over mushrooms and capsicum.
