Title: Marinated Mushroom Salad

500 g Mushrooms
1 Capsicum quartered; seeds &

2/3 c Light olive oil
1/3 c Lemon Juice
1/4 c Shredded basil leaves
1 tb Seeded mustard
1 tb Caster sugar
1 Clove garlic; crushed

1. Wipe mushrooms with a damp paper towel. Slice thinly. Place in a large
bowl.

2. Cook capsicum quarters under a hot grill until charred. Place in a
plastic bag until cool enough to handle.

3. Rub off skin. Cut into thin slices. Combine with mushrooms.

4. To prepare dressing: Place all ingredients for dressing in a screw top
jar. Shake well. Pour over mushrooms and capsicum. Allow to stand for at
least 15 to 20 minutes before serving, stirring occasionally.
