1 lb Mesclun; (mixed baby
; greens)*, rinsed
; and spun dry
1/4 c Extra-virgin olive oil
1 1/2 tb Champagne vinegar* or other
-wine vinegar

*available at specialty foods shops and some supermarkets

In a large bowl toss mesclun with oil and drizzle with vinegar. Season
salad with salt and pepper and toss.

Serves 12.
