Mexican Ground Beef


Title: Mexican Ground Beef

Yield: 6 Servings

6 sl Bacon
1 c Onions, chopped
1/2 c Green pepper, chopped
2 Cloves garlic, minced
1 1/2 lb Ground beef
1 cn (28 oz.) tomatoes, chopped
-with juice
Salt and pepper to taste
1 tb Chili powder
1 c Kernel corn
1 c Kidney beans, rinsed and
-drained
2 c Potatoes, peeled and diced

Fry bacon until crisp. Drain and set aside. Sauté onion, green pepper,
and garlic in bacon drippings. Add ground beef and cook until browned.
Lower heat and add tomatoes and juice, salt, pepper, chili powder, corn,
beans, and potatoes. Cook 45 minutes or until potatoes are tender. When
ready to serve, crumble bacon over top. Yield: 6 servings Typed in MMFormat
