Title: Mexican Potatoes Categories: Mexican, Potatoes, Tomatoes Yield: 4 servings 1 lb Potatoes; mashed, coarsely -(4 large) 1/4 c Onion; diced 1 c Tomatoes; diced 1/2 ts Fresh ground black pepper; -To taste 1/2 ts Hot chili pepper; to taste -(1/2 to 1) Salt to taste 1 Clove garlic; pressed or -minced Fry all ingredients, except potatoes, together for 5 minutes or until they are clear and tender. You may add oil or butter to your taste. Add potatoes, fry until heated through. Garnish with shredded cheese.
