Mexican Succotash
Title: Mexican Succotash Categories: Cheese, Ground beef, Main dish, Mexican Yield: 2 servings 1/2 lb Ground beef 1/4 c Chopped onion 1/2 ts Chili powder; (1/2 to 1) 1/8 ts Garlic powder 1 ds Red or black pepper 1 cn Corn; (7 oz) drained 1 cn Tomato sauce; (8 oz) 1 c Corn chips; slightly crushed 2 oz Shredded cheddar In 1qt micro safe casserole crumble beef; add onion. Micro 3min on high or til no longer pink; drain. Stir in chili powder, garlic, pepper, corn & tomato sauce. Micro 5min on high; stir. Sprinkle w/ chips; top w/ cheese.
