Minted Rice with Peas
Title: Minted Rice with Peas Categories: August 1993 Yield: 1 servings 1 c Water 1/2 c Long-grain rice 1 tb Vegetable oil 1/4 ts Salt 1/2 c Thawed frozen peas 1 1/2 tb Finely chopped fresh mint -leaves 1/4 ts Fresh lemon zest In a small heavy saucepan bring the water to a boil, stir in the rice, the oil, and the salt, and cook the mixture, covered, over low heat for 15 minutes.
