1 Fresh peeled mirliton;

Season with ajilimojili
-sauce to taste.

; SALAD***
3/4 c Virgin olive oil; up to 1
1/2 c Cider vinegar
1/2 sm Onion; peeled
4 Cloves garlic; peeled, up to

1/2 Green Italian or Anaheim
-fresh pepper; seeded and
-cut into
; chunks
8 Sweet seeded and deveined
-little peppers
; or 1/4 cup chopped red
-pepper
1 tb Capers
1 ts Fresh oregano
1/2 c Fresh coriander; up to 3/4
Salt and pepper to taste

Chop all ingredients in the food processor until creamy. Adjust seasoning
to your own taste.
