Title: Orange Pecan Chicken Categories: Poultry Yield: 4 Servings 8 sm Chicken breasts 1/2 c Butter or margarine,melted Salt, good sprinkle Pepper, sprinkle -----------------------------------SAUCE----------------------------------- 1 tb Grated orange rind 1 1/2 c Prepared orange juice 14 oz Pineapple tidbits with juice 1 c Raisins 3/4 c Chopped pecans or walnuts 1/2 ts Cinnamon 1/4 ts Allspice 2 tb All-purpose flour 1/4 c Water 2 ts Soy sauce Sliced oranges, for garnish Dip meat into melted butter. Place on baking sheet with sides. Sprinkle with salt and pepper. Bake uncovered in 400øF oven for 20 minutes. Reduce oven heat to 350øF. (SAUCE): Measure next 7 ingredients into saucepan. Bring to a boil stirring often. Pour over chicken. Bake for 30 minutes more until tender. Transfer meat to platter. Pour sauce into saucepan. Mix flour, water and soy sauce until smooth. Add to saucepan. Stir over medium heat until it boils and thickens. Pour over meat. Garnish with sliced oranges. Variation: Sprinkle heavily with curry powder after dipping in melted butter and sprinkling with salt and pepper. Try this on all or even on a few pieces.
