1/3 c Commercial Catalina dressing
1 Kiwi Fruit; peeled and
-sliced
1 tb Fresh Lime Juice
2 ts Poppy Seeds
4 c Fresh Escarole or Endive
-Lettuce; rinsed and torn
1 lg Papaya; peeled, seeded, and
-cut into 1-inch pieces

To prepare the dressing, process the Catalina dressing, kiwi fruit, fresh
lime juice, and poppy seeds in a blender until smooth. Refrigerate in an
airtight container and shake again to blend before drizzling over your
salad.

To serve, arrange one quarter of the Papaya pieces on top of about one cup
of the torn endive. Top with dressing and present to an appreciative
audience.
