2 c Mayonnaise
1 Cucumber - diced
1 Red bell pepper - diced
1/4 c Dijon mustard
1/4 c Lemon juice
Salt and pepper

Directions: Cook potatoes. Cut into bite-sized pieces. Mix all ingrredients
together and chill.
