Title: Pea And Coriander Soup Categories: A, Year, At, Ballymaloe Yield: 6 servings 55 g Butter 140 g Onion; finely chopped 2 Cloves garlic; peeled and -chopped 1 Green chilli; seeded and -finely ; chopped 450 g Fresh peas; frozen ones are ; also fine 900 ml Chicken stock 2 tb Freshly chopped coriander Salt and freshly ground -black pepper Sugar ----------------------------------GARNISH---------------------------------- Softly whipped cream Fresh coriander leaves Melt the butter over a gentle heat and sweat the onion, garlic and chill for 3-4 minutes. Add the peas and cover with the stock. Bring to the boil and simmer for 7-8 minutes. Add the freshly chopped coriander and liquidize in a blender. Season with salt and pepper and add a pinch of sugar, which enhances the flavour. Serve with a swirl of whipped cream and a few fresh coriander leaves.
