Title: Pear Corned Beef Slaw Categories: Fruit, Alads Yield: 6 servings 2 Fresh USA Bartlett pears; -red and yellow, Cored; diced 6 c Shredded cabbage 1 cn Corned beef; (12 ounces) -cubed 1/4 c Chopped onion 1 c Mayonnaise 1 c Cubed Swiss cheese 1 tb Vinegar 2 ts Prepared mustard 1 ts Prepared horseradish 2 ts Sugar 2 ts Celery seed 1 ts Caraway seed; (optional) Toss together pears, cabbage, corned beef, Swiss cheese and onion. Blend mayonnaise with remaining ingredients. Add to salad and toss gently, so that all ingredients are coated evenly. Serve in a lettuce lined bowl. Garnish with additional red and yellow pear slices and parsley, if desired. Always be sure to use ripe pears.
