2 tb Fresh basil
1/4 pt Champagne vinaigrette
6 Thin slices Comice pear; (6

7 Strips provolone cheese;
-approx 2 x 1/2 inch

---------------------------CHAMPAGNE VINAIGRETTE---------------------------
1/2 pt Mild olive oil
2 1/2 fl Champagne vinegar
1/4 pt Champagne
Salt and ground black pepper
Sugar if required

Whisk the vinaigrette ingredients together adding sugar if necessary.

Toss the rocket and herbs with half of the vinaigrette. Top with the pear
and cheese and drizzle with the remaining vinaigrette.
