Title: Plank Salmon with New Potato Salad

1/2 lb Salmon
1 tb Bayou Blast; see * Note
1 Untreated cedar plank; oiled
-well
1/2 Onion; grilled
1/2 Bell pepper; grilled
1 c BBQ sauce
1/2 lb New potatoes; quartered,
-blanched
1/2 c Chopped cilantro
1/4 c Sliced green onions
Salt; to taste
Freshly-ground black pepper;
-to taste
2 tb Mayonnaise

* Note: See the "Bayou Blast - {Emeril's Creole Seasoning}" recipe which is
included in this collection.

Rub salmon with Bayou Blast and place on the cedar plank. Place salmon on
grill, close the lid. Chop grilled onion and pepper and add to BBQ sauce.
After 4 minutes, brush BBQ sauce on salmon. Let cook 2 more minutes and
serve with potato salad. For the potato salad: Mix potatoes, cilantro,
green onions, salt, pepper, and mayonnaise. Cover and refrigerate until
ready to serve. This recipe yields ?? servings.
