Title: Plum Salsa Categories: Lowfat, Sauces, Salsas, Gravies Yield: 6 servings 1 1/4 lb Ripe plums; quartered and -pitted 1 sm Red onion; quartered 1 c Fresh cilantro 3/4 c Fresh mint 1 tb White wine vinegar 1/2 ts Salt 1/4 ts Pepper 1/8 ts Red pepper Place plums and onion in a food processor; pulse 10 times, scraping sides of bowl occasionally. Add cilantro and remaining ingredients; pulse five times or until mixture is chopped. Do not over process mixture or salsa will become mushy. Six 1/2 cup servings.
