Title: Pollo En Salsa De Pipian (Chicken in Pumpkin Seed Sauce)

Yield: 4 servings

3 Chillies; deseeded
2 Cloves garlic
1 l Chicken stock
125 g Peanut butter
225 g Pumpkin seeds
1 c Corn chips; (nachos)
8 Skinned; boned chicken thigh
; fillets
Oil for cooking

Place all ingredients except the chicken into a food blender and blend
until smooth.

Place the oil into a saut‚ pan. Heat and lightly brown the chicken thighs.

Add the blended ingredients and simmer for 15-20 minutes until creamy in
consistency and the chicken is cooked (no pink juices).

Serve alongside stir fry vegetables, salsa and corn chips.
