Title: Roast Chicken Wings with Black Bean Sauce

960 g Chicken wings
1 tb Black bean sauce
1 tb Light soy sauce
1 ts Sugar
3 Garlic cloves; finely
-chopped
4 sm Fresh red or green chillies;
-finely chopped
1/2 ts Ground white pepper

Remove the final fingertip of the wings and the arm bone (the one closest
to the body). In a roasting dish, mix all the ingredients, ensuring that
the chicken wings are well coated. Leave to marinate for at least 1 hour.
Preheat the oven to 180C/350F/gas 4.

Arrange the wings on to the boned bases with the bone in the centre as
below. Roast the chicken wings for about 30 minutes.
