Title: Roasted Free Range Chicken with Macaroni Gratino Categories: Dujour04 Yield: 1 servings 1 Whole free range chicken -weighing 2-3 pounds Salt Pepper 1 bn Fresh thyme 3 oz Baguette Butcher string 3 oz Olive oil Remove wings from chicken and stuff chicken with salt, pepper, thyme and baguette. Use butcher string to tie. Heat olive oil in a 12-14-inch saucepan. Place chicken breast side down and cook until golden brown. Turn chicken on its back and place in a 375 degree oven for 30-40 minutes or until juices run clear. Remove and rest 10 minutes and carve chicken. Serve with macaroni gratin.
