1 Mignonette lettuce or 2
-large handfuls
; soft leafed salad
-selection
200 g Beans; freshly boiled
2 Ripe tomatoes; cut into
-wedges
1 200 gram can tuna in olive
-oil
2 Hardboiled eggs; quartered
2 Potatoes; freshly boiled,
-cut
; into chunks or
; halved, up to 4
2 tb Olive oil
1 ts Wine vinegar
Salt
Freshly ground black pepper
16 sm Black olives
8 Anchovies; split lengthways

Cover platter with washed, dried salad leaves. Gently mix warm beans,
tomato, drained tuna, egg and potato with olive oil, vinegar, salt and
pepper and tumble onto salad leaves. Scatter olives and anchovies over.
