Title: Salmon Burgers Categories: Barbara3 Yield: 1 servings 2 1/2 c Cooked salmon 1/2 c Chopped green onions 1 tb Lemon juice 1 tb Fresh chopped tarragon 1 ts Dijon mustard 1 ts Prepared horseradish 1/2 ts Salt 1/2 ts Pepper 3 tb Mayonnaise 1/2 c Dry breadcrumbs 1 tb Butter Combine first 8 ingredients. Add mayonnaise and mix well. Cover and refrigerate. Just before serving, mix breadcrumbs into salmon. Form into 4 patties. Melt butter in heavy skillet. Add salmon patties. Cook until golden and firm, about 3 minutes each side. Serve on toasted bread with Tarragon Mayonnaise, if desired. For Tarragon Mayonnaise, combine 1 cup mayonnaise, 1 Tbls lemon juice, 1 Tbls fresh chopped tarragon and 2 tsp Dijon mustard. Mix well. Converted by MC_Buster. Converted by MM_Buster v2.0l. |
