Title: Shrimp Toast Categories: Eastwest Yield: 6 servings 2 c Chopped shrimp 1 c Napa cabbage 1 tb Minced ginger 1 tb Sesame oil 1 Whole Egg 1/4 c Chopped scallions 1/4 c Chopped cilantro 1/2 c Finely-diced jicama Salt; to taste Freshly-ground white pepper; -to taste 6 sl Dried bread; crust removed 1/4 c Sesame seeds Canola oil In a food processor, puree first 5 ingredients. Check for seasoning. Fold in scallions, cilantro and jicama. Spread the mixture on bread, cut in half on the diagonal and sprinkle with sesame seeds. Heat a deep fryer to 375 degrees and fry until golden brown. This recipe yields 6 slices.
