Shrimp Verde
Title: Shrimp Verde Categories: Toohot08 Yield: 4 servings 1 lb Cooked; cleaned shrimp, -chopped 1/4" dice 1/4 c Lime juice 1/4 lb Tomatillos; husks removed, And diced 1 bn Green onions; sliced 4 Jalapenos; seeded, chopped 1 Garlic clove; peeled 1 bn Cilantro leaves; chopped 1 sm Avocado; peeled, pitted 1 ts Sea salt 1/2 ts Freshly-ground black pepper Marinate the shrimp in the lime juice for one hour. Drain and reserve the juice. In a large bowl combine the shrimp, tomatillos, green onions, jalapenos, garlic, cilantro, avocados, salt and pepper and toss to coat. Serve immediately. This recipe yields 4 to 6 servings.
