1/2 c Apple juice
1/2 c Dry sherry
1/2 c White wine
2 Shallots; chopped
2 Cloves garlic; chopped
2 c Heavy cream
1 tb Curry powder
Salt and pepper to taste

1 Breast smoked chicken;
-julienned
1 Pear; peeled and sliced
1 Red pepper; diced
1 sm Sweet onion; diced
4 oz Fresh mild goat cheese
2 Sheets puff pastry; about
-1/8 th of an
; inch thick (8x10)
Egg wash

Place apple juice, sherry, white wine, shallots and garlic in a medium size
sauce pan. Reduce over high heat until about 1/4 cup of liquid remains. Add
cream and reduce until about 1 1/4 cup of liquid remains. Heat a small
saute pan until hot. Add the curry powder and dry saute until you smell the
aroma. About 1 minute. Add curry powder to the sauce and season with salt
and pepper. Allow to cool.

filling:

Place chicken, pear, pepper, onion, goat cheese and cooled sauce in a
medium size bowl. Mix well. Cut the puff pastry into either 18 squares or 6
large squares. Place an appropriate amount of mixture depending on the size
of the square. Fold over dough to form a triangle. Seal the triangle with
egg wash. Crimp with a fork. Brush the tops of the triangle with a bit of
egg wash and place on a greased sheet pan. Bake in a 425 degree oven 15-25
minutes or until golden brown. Serve warm or cold.
