1/2 lb Unsalted butter; softened
2 Chipotle peppers; canned in
-adobo sauce
2 Clove garlic 3 tablespoons
-coarsely chopped shallots
1 Lime ; juice of
Kosher salt and fresh ground
-pepper.

Place the butter, chipotles, garlic, shallots, and lime juice in a food
processor and blend until smooth. Season with salt and pepper. May be
refrigerated, covered for up to 3 days.
