Title: Sorrel Salad Categories: Mike03 Yield: 4 servings 1 bn Fresh sorrel; tough stems -removed, About 1 cup; loosely packed 1 c Mesclun salad mix 1/3 c Extra-virgin olive oil 3 tb Balsamic vinegar 2 tb Honey 1 tb Lemon juice Salt; to taste Freshly-ground black pepper; -to taste 1/4 c Finely-julienned Smithfield -ham (or use prosciutto) 1/4 c Crisp French bread croutons In a large bowl toss sorrel and salad greens together. In a separate bowl, whisk to combine the oil, vinegar, honey, and lemon juice. Season dressing with salt and pepper. Pour dressing over greens and toss. Add ham and croutons, toss, and serve. This recipe yields 4 servings.
