Speedy Christmas Pudding
Title: Speedy Christmas Pudding Categories: Good, Living Yield: 10 servings 1 411 gram jar luxury -mincemeat 3 tb Cointreau liquor or brandy 50 g Flaked; toasted almonds Grated rind of 1 orange 1 Orange; juice of 2 tb Black treacle 2 Eggs; beaten 50 g Fresh white bread crumbs 75 g Self raising flour Butter for greasing 1 Grease and line the base of a 1 litre/1 3/4 pt microwave-proof pudding basin. 2 Combine all the ingredients in a large bowl until well blended together. Pour the mixture into the prepared basin and level the top. 3 Cover the basin top with buttered greaseproof paper and then microwave clingfilm, pierced several times. 4 Microwave on medium for eight minutes and then allow to rest for five minutes before turning out on a serving plate.
