Squash Casserole
Title: Squash Casserole Categories: Curtis aike, Flash3 Yield: 1 servings 1 lb Yellow squash; sliced 1 md Onion; chopped 2 Carrots; coarsely grated 1 Stick Unsalted butter; (1/2 -c.) 1 c Sour cream 1 cn Condensed cream of chicken -soup; (10 3/4 oz.) 2 c Pkg. Cornbread stuffing mix Pimientos-; (1 small can) Preheat oven to 375 degrees. In large skillet w/ oil, saute onions, carrots, squash & butter till tender. Stir in sour cream & soup. In 2 qt. Baking dish, spread stuffing mix on bottom. Spread squash mixture over stuffing. Cover & bake till heated throughout. Remove from heat. Sprinkle pimentos on top. Cover & let stand till ready to serve. Approximately 20 minutes.
