Drain. In the wok heat the olive oil and stir-fry the beans and spring onions. Then add the drained gnocchi and rocket leaves. Cook for another 2 minutes and season. To serve, arrange half the gem lettuce and tomatoes on a plate and top with half the stir-fry mixture. Sprinkle with half the Parmesan.
