Title: Stove Top Zucchini Casserole Categories: Veg03 Yield: 4 servings 6 md Zucchini; thickly sliced 3 Potatoes; chopped 4 Celery Stalks; sliced 6 Green Onions; sliced 1/2 ts Basil 1/4 ts Oregano 1 ts Low Sodium Tamari 1 c Tomato Sauce In a large saucepan, saute the onions and celery in 1/4 cup water about 5 minutes. Add the remaining ingredients. Stir gently to mix. Cover and cook over medium-low heat until tender, about 35 minutes.
