Stuffed Chicken Breasts with Goat's Cheese
Title: Stuffed Chicken Breasts with Goat's Cheese Categories: M& Yield: 2 servings 2 Chicken breasts; (boned and -skinless) 2 ts Pesto 1 pk Soft goat's cheese Fresh basil leaves Half a lemon 4 sl Parma ham Salt and pepper 1. Slice chicken breast lengthways, not quite all the way through. 2. Spread the pesto and cheese on one side of the breast _ fold breast over and wrap around two slices of Parma ham to secure. 3. Place the chicken breasts in an oven proof dish. 4. Salt & pepper the chicken, place lemon quarters around the chicken _ and finally drizzle some wine over them 5.
