Stuffed Meat Loaf
Title: Stuffed Meat Loaf Categories: Italian, Beef, Main dish Yield: 8 Servings 2 lb Ground beef 1 c Parmesan cheese 2 Garlic cloves 6 Leaves fresh parsley, chop Olive oil for frying Salt/pepper 1 1/2 c Bread crumbs 2 Eggs 1/2 c Water 1/2 lb Mozzarella, cut lengthwise -into four pieces Tomato sauce Mix all ingredients except mozzarella, thoroughly. Form into a firmly packed football shape. Make a deep lengthwise slit and stuff with mozzarella; close meat loaf firmly around cheese. Heat oil in a large fry pan and brown meat loaf on all sides. Gently lift out and place in simmering tomato sauce to cook slowly 30-45 minutes on low heat. Serve sliced with pasta or rice. Posted to MM-Recipes Digest by Paula 01, 1998 |
