Sundried Fish Platter
Title: Sundried Fish Platter Categories: Sainsbury's, Sainsbury5 Yield: 4 servings ------------------------------FOR THE PLATTER------------------------------ 375 g Smoked mackerel fillet; -skinned and flaked ; (12oz) 2 Pink grapefruit; peeled and ; segmented Lollo biondo lettuce leaves 1 bn Watercress 4 Salad onions; finely chopped 1 sm Red pepper; diced ------------------------------FOR THE DRESSING------------------------------ 2 tb Light olive oil 1 tb White wine vinegar 1 tb Freshly chopped parsley Salt and freshly ground -black pepper Arrange the smoked mackerel and grapefruit on a bed of lollo biondo and watercress. Sprinkle over the salad onions and pepper. Blend the dressing ingredients together and spoon over just before serving. Converted by MC_Buster.
