250 g Self raising flour
1 pn Salt
125 g Suet
125 ml Milk
Butter for greasing basin
1 lg Unwaxed lemon
3 tb Dark marmalade
3 tb Brown sugar
100 g Unsalted butter

Preheat the oven to 170C. Rub flour, salt and suet together then add the
milk to make a paste and roll out to line a pudding basin. Grease basin,
line basin. Prick lemon all over and place in bowl along with the remaining
ingredients, cover with remaining pastry. Cover with foil, place in
bain-marie in oven and steam for 11/2 hours. Serve with custard.
