Title: Sweet Potato Biscuits Categories: Breads Yield: 12 servings 2 c Sifted flour 4 ts Baking powder 1 ts Salt 2/3 c Sugar 1/2 c Shortening 2 c Mashed sweet potatoes 1/4 c Milk Sift the flour, baking powder, salt and sugar together into a bowl and cut in shortening until mixture is the consistency of cornmeal. Mix in the sweet potatoes. Add the milk and mix well. Turn out on a floured board and knead lightly. Roll out to 1/2-inch thickness and cut with a 2-inch biscuit cutter. Place on a greased cookie sheet. Bake in 475F oven for 12 to 15 minutes. Serve hot with butter.
