Title: Sweet Potato Casserole Categories: None Yield: 8 servings 3 md Sweet potatoes; (about 1-1/2 -lbs), pared and cut into -chunks. 2 lg Baking apples; (about 1 -lb.), cored and cut into -wedges. 1 ts Ground cinnamon 1/2 c Firmly packed brown sugar 1 Bay leaf 1/2 c Orange juice 2 tb Margarine; melted. Preheat over to 400F. In an 8 or 9 inch square baking dish, coated with vegetable cooking spray, place potatoes and apples. Sprinkle first with cinnamon, then with sugar; toss lightly. Add bay leaf, orange juice and margarine. Cover dish with foil. Bake about 60 minutes or until potatoes and apples are fork-tender. Remove bay leaf before serving.
