1 md Sweet potato
1/4 c Frozen corn; thawed
1 Pickled jalapeno; chopped
1 tb Chopped onion
1 ts Chopped garlic
1/4 ts Cumin
Lime juice to taste

Bake potato in the microwave until done. Combine remaining ingredients in a
small bowl. Split potato in half, mash a bit, and fill with the salsa.

Yield: 1 serving
