Title: Tofu Sandwich Spread Categories: None Yield: 1 servings 1 pk Tofu drained and mashed 1/3 c No cholesterol mayonnaise; -up to 1/2 2 ts Mustard 1/2 ts Minced garlic or garlic -powder 1/2 c Chopped green pepper 1/2 c Chopped red pepper 1/2 c Chopped celery 3 tb Grated carrot 2 tb Chopped dill pickles 2 ts Soy sauce 1/2 ts Salt and pepper; (to taste) Mix all ingredients well. Cover and refrigerate until serving time. Serve on lettuce leaves, crackers for appetizers, or use as a sandwich filling. This recipe has absolutely no cholesterol, is low in calories and high in fiber, vitamins, protein and minerals. In fact tofu (soybean cake) is one of the highest forms of protein available.
