10 Tomatillos; husked and
-washed, 5 halved, 5 chopped
-coarsely
3 tb Lime juice
1/4 c Finely chopped red onion
1 Jalapeno pepper; finely
-chopped
2 tb Olive oil
1 ts Honey
Kosher salt and fresh ground
-pepper
1/4 c Coarsely chopped cilantro

Place the halved tomatillos and the lime juice in a blender and blend until
smooth. Place the coarsely chopped tomatillos, onion, and jalapeno in a
medium bowl, add the tomatillo mixture, toss to coat. Add the olive oil and
honey, season with salt and pepper. Fold in the cilantro just before
serving. serve at room temp. May be refrigerated for 1 day without the
cilantro.
