Tomato Juice


Title: Tomato Juice

Yield: 1 Batch


Select firm, ripe tomatoes. Wash, scald, peel and cut in fourths or
smaller pieces. Simmer until softened. Stir occasionally to prevent
scorching. Put through sieve fine enough to remove seeds. Bring juice to
boiling and pour immediately into clean jars, filling to within 1/4 inch of
top of jar. Put on cap, screwing the band tight. Process in water bath for
10 minutes.
