1 1/4 c Salt; (non iodized is best)
3/4 c Firmly packed brown sugar
1 tb (level) saltpeter (if you
-can't get it its ok to
-leave out)
3 c Apple cider or juice
4 tb Blackpepper
1/2 oz Maple flavoring
1/2 ts Ginger

Hi to all of you who are looking for a turkey marinade or brine. I have
been using this one for 4 years now and it has stood the test of time as
far as I am concerned.

Here are the instructions and ingredients for one turkey. You can add to
this recipe as needed:

soak bird 2-3 days in this brine. take out and rinse off in cold water. pat
dry and smoke. eat and enjoy birdie!!!!!!!!!
