Turkey Hash
Title: Turkey Hash Categories: None Yield: 3 servings 2 tb Butter or Margarine 1 md Yellow Onion; chopped 1 sm Sweet Red Pepper; chopped 2 md Leftover boiled Potatoes; -chopped 2 c Leftover Turkey; chopped 1/2 ts Dried Rosemary Salt and Black Pepper 1/4 c Chicken or Turkey Broth Melt the butter or margarine in a large skillet over moderate heat. Add the onion and red pepper and sauté for about 5 minutes or until tender. Stir in chopped potatoes, turkey, and rosemary, and season with a bit of black pepper and salt to taste. Cook, stirring constantly, for at least 5 minutes. Stir in broth, then cook and stir for 2 minutes more, or until it has a desired consistency. Serve warm.
