2 Tubs ricotta cheese
2 Handfuls dried fruit; diced
1 Lemon; zest of
2 oz Vanilla sugar
2 Egg yolks
2 oz Ground almonds

Empty two tubs of ricotta into a Mouli and mash into a bowl. Add the ground
almonds, the egg yolks and stir.

Next add the diced dried fruit, sugar and lemon zest. Mix all together.

You can either serve cold or cook in a medium oven for half an hour.
