Title: Vegetable Spring Rolls Categories: Jenny, Bristow's, Country, Kit Yield: 4 servings 115 g Bean sprouts 1 Carrot; diced 115 g Mushrooms; . diced 2 Cloves garlic; finely -chopped 2 Spring onions; finely -chopped 1 Dessertsp oil 1 Egg; lightly beaten 8 Spring roll parchment skins Oil to deep fry Mix the bean sprouts, carrot, mushrooms, garlic, spring onions and oil together and heat gently in a frying pan. Brush the parchment squares with beaten egg, then spoon 1 dessertsp of the filling on top of each. Fold in the edges and roll up the spring roll. Secure the edges well, then deep fry for approx 2 minutes until golden brown and crispy. Serve hot.
