Vegetarian Stir Fry Grilled Pizza
Title: Vegetarian Stir Fry Grilled Pizza Categories: Eastwest2 Yield: 1 servings Canola oil; to cook 1 tb Minced garlic 1/2 tb Minced ginger 2 lg Red onions Salt; to taste Freshly-ground black pepper; -to taste 2 c Sliced shiitake mushrooms 1 c Sliced yellow zucchini 1 c Sliced green zucchini 2 Tomatoes; thinly sliced 1/3 c Thai basil chiffonade 2 c Grated mozzarella cheese 1/3 Pizza Dough recipe; see * -Note * Note: See the "Pizza Dough" recipe which is included in this collection. In a hot wok coated with oil, stir-fry garlic, ginger and onions. Season with salt and pepper and cook until onions are caramelized. Add mushrooms and zucchini and stir-fry until soft. Check for seasoning. Place filling on top of a grilled pizza dough. Cover with tomato slices and basil. Cover with cheese. This recipe yields two 8- to 10-inch pizzas.
