Title: Warm Potato Salad Categories: None Yield: 6 servings 2 tb Olive or Vegetable Oil 1 lg Red or Green Bell Pepper; -seeded and diced 1 md Onion; chopped 2 lb Potatoes; peeled if desired, -and cut into 1/2-inch -pieces 1 pk Herb with Garlic Soup Mix 1 c Water 2 tb Red Wine Vinegar 1 ts Prepared Dijon-style Mustard In large skillet over medium heat, warm the oil and sauté the pepper and onion, stirring frequently, for about 5 minutes. Add potatoes and herb soup mix blended with water. Bring to a boil over high heat setting. Reduce heat to low and simmer covered, stirring occasionally, for about 15 minutes or until potatoes are tender. Stir in vinegar and mustard. Serve warm.
