Watercress Soup
Title: Watercress Soup Categories: Soups, Spices Yield: 4 Servings 1/2 c Coarsely chopped onion 1/2 c Diagonally sliced carrots 2 c Chicken stock 4 tb Cornstarch dissolved in 1/4 -cup of water 1 lg Bunch fresh watercress, torn -into bite-sized pieces Simmer onions and carrots in chicken stock until just tender. Add cornstarch mixture and stir until thickened. Add watercress and serve warm. Or for cold soup, chill and add 1 cup plain yogurt or sour cream before serving. Seasoning to taste.
