1/2 Red cabbage; shredded
1 sm Onion; sliced finely
1 Green pepper; de-seeded and
; sliced finely
1 Red pepper; de-seeded and
; sliced finely
1 Yellow pepper; de-seeded and
; sliced finely

------------------------------FOR THE DRESSING------------------------------
2 tb Olive oil
1 ts Wine vinegar
1/2 ts Sugar
1/2 ts Fresh mustard
Salt and pepper

Place the cabbage, onion and peppers in a salad bowl.

To make the dressing, whisk together the oil, vinegar, sugar and mustard.
Season with salt and pepper, pour over the salad and toss well.
