Apple-Sage Chutney

1/3 c Onion; thinly sliced
2 1/2 lb Apple; tart, coarsely
-chopped
1 c Apple cider; or apple juice
1/2 c Light brown sugar; packed
1/3 c Dried cherries
1/2 c Golden raisins
1/3 c Dates; chopped
6 tb White wine vinegar
2 Cloves garlic; minced
1/2 c Sage; chopped
