Baked Rice Custard

Title: Baked Rice Custard

Yield: 6 Servings

2 c Cooked brown rice
3/4 c Sugar
1/2 c Raisins
1 ts Vanilla
2 1/2 c Milk
2 lg Eggs -or-
3 sm Eggs

Heat milk to just below boiling and add rice. Beat eggs, add sugar, vanilla
and pour into shallow baking dish. Bake at 325 degrees for 25 minutes or
until custard is firm.
