Bayou Salad

1 lb Crawfish; cooked and peeled
2 c Cooked rice
1 c Celery; sliced
1/2 c Cherry tomatoes; quartered
1/3 c Ripe olives; sliced
1/3 c Green pepper; diced
1/2 c Fat-free Italian salad
-dressing
Lettuce leaves

Combine all ingredients except lettuce in large bowl. Serve on lettuce
leaves. Yield: Serves 6
